I completed my MBA recently............now incase I have to join college, do I have to be a full time student can I take one subject and study

Are you a US citizen??

Do you have a Green card??

Are you in F-2, H-4 or any other dependency categories of visa?

If you answer 'YES' to any of the above mentioned question you can take any number of classes as you want else you will need to maintain 8 credits minimum.

I thought that after completing one degree, while persuing the 2nd degree one could just take one subject

no.  you have to be a full time student if you are currently in F 1 status.  however, if your status is H1 and wants to take classes, you can do so.
